使用台灣優質豬肉臉頰部位的嘴邊肉,又名「豬頰肉」、「舌肉」,嘴邊肉位於豬臉頰兩側,下方連接著豬舌頭,因為豬咀嚼時會一直運動到此部位,故肉質軟嫩卻有嚼勁,口感類似牛腱,非常適合滷煮或燉,是「黑白切」常會吃到的肉,因紋路類似菊花,也有人稱之「菊花肉」。一隻豬只有兩小塊嘴邊肉,非常搶手!
