▍澳洲牛腱(草飼)
(600g±10%)

來自澳洲天然放牧的牛隻,精挑牛隻後腿肌肉的部分,精修方切骰子規格狀,
方便烹煮毋需再特別切塊;其肉質結實,筋軟Q、彈牙、富嚼勁,讓您一口咬
下同時享受兩種不同層次口感。適合燉煮、咖哩。

食材:牛腱(腱心、肋條),蔬菜高湯(水),紅/白蘿蔔、薑、蔥、番茄、洋蔥
將切塊的牛肉洗淨拭乾後,放入滾水中汆燙去除血水雜質,撈起以冷水洗淨
熱油鍋,將蔥段、薑片、辣豆瓣醬爆炒至起泡。
取一乾淨湯鍋,加入蔬菜高湯(水),及步驟1.2的食材,並加入紅蘿蔔、白蘿
蔔、水燉煮,爐火上加熱至沸騰後改小火,煮約60分鐘,再加醬油調味。
紅蘿蔔可增加汁液顏色,白蘿蔔可增加湯汁鮮度。
可選購蔬菜高湯一起燉煮,增加湯頭的甜度。
