使用台灣優質豬肉臉頰部位的嘴邊肉，又名「豬頰肉」、「舌肉」，嘴邊肉位於豬臉頰兩側，下方連接著豬舌頭，因為豬咀嚼時會一直運動到此部位，故肉質軟嫩卻有嚼勁，口感類似牛腱，非常適合滷煮或燉，是「黑白切」常會吃到的肉，因紋路類似菊花，也有人稱之「菊花肉」。一隻豬只有兩小塊嘴邊肉，非常搶手！
