「澳洲和牛」是引進來自日本的母和牛至澳洲繁殖，和澳洲安格斯牛配種，搭配日本養殖技術培育而成。過去澳洲牛肉，牛味較淡，且原來的肉品分級也只有M1至M9等級，M9等級大約是日本和牛A3等級，超過M9則稱為M9+等級；在引進日本和牛配種之後，肥育的和牛肉擁有充足的油脂，而且入口即化、肥而不膩，現在M9+等級中以M12為最高級，肉與脂肪的比率高達50%，相當於日本A5和牛的品質
